CHEESE-TASTING ADVICE
ADVICES FOR TASTING THE CHEESE

When should we eat cheese, at the beginning or the end of a meal?
The answer is quite simple: whenever you wish. Customs and habits in different countries vary greatly and this does not mean that any one culture is right or wrong. The French usually eat cheese after afterward as a great ending to a good meal. Spanish people tend to eat cheese before the meal, as “tapas”. The advantage of eating cheese before the meal is that this way we can discover and perceive all the aromas and flavors which, to the contrary, would be eclipsed by some other dish which might saturate our palate.

At what temperature should cheese be eaten?
Cheese should be consumed at temperatures at around 25ºC (ºF) for hard textured cheeses (cured, aged and mature) and around 20ºC (ºF) for semi-cured, aired and soft cheeses. If the cheese is fresh, we recommend not exceeding 15ºC (ºF).

How should cheese be cut?
Cheese should be cut depending on its shape. You can use to types of cuts: cubes or slices.

How should cheese be preserved?
Cheese should be preserved in a cool and dry place.
