Tetilla(La Serena)

Some regions of Spain have decided to protect a certain way of making cheese produced from a specific kind of milk. This system allows them to maintain the tradition and to ensure that the production process of the cheese from that region does not vary.
Each “Denominación de Origen” (D.O.), or Guarantee of Origin, is governed by a regulatory council which makes sure that the rules of production are always perfectly observed. There are rules which govern where the milk must come from, referring to the breed of livestock and the grazing lands to be used. Then, each step in the production process is clearly defined and delimited, such as if the milk should be fresh or pasteurized, to what temperature the milk should be heated, what kind of rennets and ferments can be used, the size of the cut up pieces of curdle, the salting process, what shape and size the cheese can be, where it should be cured, for how long and which parameters of temperature and humidity, etc.
D.O. cheeses are inscribed in a register, are usually marked on the inside of the rind with a numbered casein plaque, and carry some kind of branding on the exterior. The council checks the number of liters of milk produced by the farmers with the number of kilograms of cheese produced so that it is very difficult to have more cheeses in the market than those actually produced, thus applying a form of anti-fraud control over the production of their cheese.
The producers and farmers usually pay fees and a small amount per kilogram of cheese produced with the D.O. sanction. The regulating council finances itself with this money.
As one can see, everything is controlled so that the cheese and its tradition are maintained.
