DESCRIPTION

A Catalan cheese with a milky and sweet flavor when fresh and more straightforward and acidic, buttery and light when tender, with a more pronounced taste of the pure cow´s milk cheeses. It is made from fresh cow’s milk. The fresh version has no rind and is white and milky, while the tender version has a thin yellowish rind. It is normally presented in small wheels and usually has the shape of a balloon.

PRODUCT HISTORY

Drap cheese has been developed over the last ten years in artesian dairies around the Pyrenees of Girona province. It is produced with a proprietary technique which makes the cheese more humid and tender. It is buttery in texture and aroma, due to the quality of the milk taken from livestock that grazes on the mountain prairies.

PRODUCTION PROCESS

Its unique technique produces more humid and tender cheeses with an intense buttery texture and aroma, thanks in great part to the quality of the milk taken from livestock that grazes on the mountain prairies. For the molding and pressing process, cheesecloth is used.

SUGGESTIONS FOR GASTRONOMICAL COMBINATIONS
This cheese can be used in many occasions, as a substitute for Burgos or Villalón cheese, when it is part of a diet. It can be eaten as either a saline or sweet cheese, accompanied by spices, aromatic herbs or sugar, honey and jams. Drap cheese can be eaten with a light white wine or a dry rosé.
