This cheese is produced from pasteurized goat's milk, and its paste is lactic and soft. It is a mature and soft cheese. The rind is thin and flexible, beige and the interior is elastic, and ivory white. It is presented in the shape of a disk with a large diameter. Its scarce height makes it resemble a torta. It weighs around one kilogram (2.2 lbs.).
The taste is very pleasant and persistant, light and profound to the palate. It takes on character during the aging process. The paste is white and spreadable when the cheese is fresh. It is produced all year round, and when it is at its peak, it can be eaten like a torta from el Casar or La Serena.
